My New Favorite Breakfast
For those of you who don’t know me personally, I had my birth control taken out back in late November. Since then I’ve gained 30 pounds, which has really given me the motivation I needed to get more into healthy eating and exercise. Don’t get me wrong, I’m extremely happy with what my body looks like now. It’s been an adjustment, but I’m happy to finally not be underweight.
However, with my new body, I have realized I can’t eat the way I used to. So, I’ve decided to start eating smarter and healthier foods. As I try new things, I’ll be sharing them here in Personal Musings!
Up first…my new favorite breakfast.
This is such an easy breakfast to make. It only takes me about 5 minutes to cook and I’m all about quick and easy meals because I hate cooking. I’m not really sure what to call it, so I’m just going to call it Fancy Scrambled Eggs.
Ingredients:
3 eggs
Sliced Baby Bella Mushrooms
Spinach
Cherry Tomatoes
Feta Cheese
A little bit of butter
Salt & Pepper
Instructions:
1. In a small or medium sized pan, throw in a little bit of butter and melt it over medium-low heat (measure with your heart here)
2. Once the butter is melted, add in a handful of spinach and baby Bella mushrooms (I don’t have an exact measurement here, just put in however much you want)
3. Let those chill in the pan, occasionally stirring, until the spinach is melted and the mushrooms are starting to turn brown
4. While the spinach and mushrooms are cooking, go ahead and whisk your 3 eggs in a bowl, adding salt & pepper (and again, measure with your heart here)
5. Once the mushrooms are brown and the spinach is wilted, add in the eggs and go about your usual business of scrambling the eggs, mixing in the spinach and mushrooms as you go
6. When the eggs are finished cooking, go ahead and turn off the stove and place the eggs, mushrooms, and spinach on your plate
7. Take a few cherry tomatoes and cut them in half then add them to your plate
8. Finally, sprinkle as much feta as your heart desires over everything and tada! Fancy Scrambled Eggs.
